Adobo

Traditional adobo recipe, featuring pork belly marinated in bold, simple ingredients and seared to perfection. 

 

Ingredients

  • 2 lbs pork belly

  • Salt (S)

  • Pepper (P)

  • Garlic powder (G)

  • 1/2 onion diced

  • 1/3 c vinegar

  • 1/2 c soy sauce

  • 1 c water

  • 3 bay leaves

  • 1Tbsp Peppercorn (optional)

  • 1 Tbsp brown sugar

Instructions

  1. Cubed pork belly, season with SPG to taste and fry until you get a nice crust. Adds flavor, texture, tenderizes, and renders out some fat. Remove from pan.

  2. Sear whole minced garlic and half chopped onion in same pan. Add vinegar, soy sauce and water. Add bay leaves and 1 tsp black pepper (or 1 Tbsp whole peppercorn if you’re a masochist).

  3. Add back seared meat, cover and place in pre-heated oven for about 45 mins until sauce thickens and meat is tender.

  4. Add brown sugar to blend flavors and add onions. Do final simmer to soften.
