Menudo

A comforting stew of chicken, potatoes, and carrots simmered in a savory tomato sauce. And yes, typically includes hot dogs! Best when served over white rice, of course.

Ingredients

  • 2 lbs chicken

  • 1/2 onion diced

  • 1 whole garlic bulb minced

  • 12 oz diced tomatoes

  • 1 c pineapple juice

  • 1 Tbsp tomato paste

  • 4 longanisa sausage

  • 3 bay leaves

  • 1 Tbsp patis (fish sauce)

  • 1 Tbsp soy sauce

  • Salt (S)

  • Pepper (P)

    Prep Veggies:

  • 1 large potatoe

  • 2 medium carrots

  • 1 green bell pepper

  • Olive oil

Instructions

  1. Sear chicken on high heat, season with salt and pepper. Remove from pan.

  2. In same pan sauté onion and garlic bulb, then add tomatoes, pineapple juice, tomato paste, longanisa, bay leaves, patis, and soy sauce.

  3. Add chicken back into pan and braise for 30 minutes.

  4. In separate pan add chopped potatoes, carrots, bell pepper and sausage. Drizzle with olive oil, season with SP, and roast in broiler until nicely browned, about 5 minutes.

  5. Add broiled veggies and sausage to chicken. Mix well and braise for about 5 minutes.
