Sinigang
A tangy tamarind based soup featuring pork and assorted vegetables, known for its strong flavors. Comfort food at its finest!
Ingredients
2 lbs pork shoulder
Salt (S)
Pepper (P)
Garlic Powder (G)
1 lb string beans or sitaw
1/2 onion diced
1 whole garlic bulb
minced
10 c water, pork or
chicken broth
2 Tbsp patis
1 Tbsp tamarind
concentrate
1 packet sinigang
seasoning
1 tomato diced
1 large carrot julienned
(optional)
2 jalapeños
1 lb spinach
Instructions
Cut pork into cubes. Season with SPG then sear all sides. Boil for 20 minutes to render out fat, tenderize, then drain.
In same pan, sear 1 lb of string beans or sitaw until blistered, charred and softened. Remove.
Sauté diced onion and minced garlic . Add back drained pork and add water or broth (chicken or pork.
Add patis, tamarind concentrate and packet of sinigang seasoning. Mix well.
Boil for 25 more minutes or until meat is soft and tender.
Add tomato andcarrots and mix well. Sliced jalapeños are optional if you like it spicy. Add spinach last. Don’t overcook, they will get mushy - which I hate: get them just to al dente for the perfect texture and flavor.
