Afritada
A tangy tomato based stew with rich coconut cream. Loaded with seared chicken and broiled veggies. Serve over white rice. Super yum!
Ingredients
2 lbs chicken
Salt (S)
Pepper (P)
Garlic Powder (G)
1 whole garlic bulb minced
1/2 onion chopped
12 oz tomato sauce
1 Tbsp patis (fish sauce)
1 Tbsp sugar
3 bay leaves
1 c coconut cream
Corn starch
Prep Veggies:
1 green bell pepper
2 large potato
2 large carrots
2 hot dogs or sausage
(Chinese, polka kielbasa, andouille, etc.)
Instructions
Season chicken with SPG then sear both sides over high heat until browned. Remove from pan.
In same pan, sauté minced garlic and chopped onion then add tomato sauce, patis, sugar and 1 tsp pepper, bay leaves, and coconut cream.
Add chicken back into pan and braise for 25 minutes. Add corn starch slurry (add water to starch and mix well to create slurry) to thicken, or water for more broth.
While chicken simmers, prep veggies. Slice bell pepper, potatoes, and carrots, season with SPG. Add hot dogs or sausage and broil for 5 minutes until tender and nicely charred.
Add broiled veggies and hot dogs or sausage to chicken. Simmer and stir well until desired consistency.
