Fried Chicken Adobo Sandwich

Ingredients

  • 2 pounds chicken thigh boneless skinless

  • Β½ c soy sauce

  • ΒΌ c vinegar

  • 1 tsp each of granulated garlic, black pepper

  • 1 Tbsp brown sugar

  • 3 Bay leaves

  • Mix and marinade chicken for at least 4 hours

Coat in batter:

  • drain chicken, coat twice, then fry until golden brown

  • 1 cup all-purpose flour

  • Β½ c corn starch

  • 1 tsp each of salt, pepper, garlic, red pepper (optional)

Assemble the Burger

  1. Brioche bun toasted

  2. Spread banana ketchup and mayo

  3. Onion rings seared

  4. Thinly sliced tomato

  5. Lettuce

  6. Provolone cheese (or pepperjack if you like heat).
